'The Mexico City Canned Tuna Blues'

Alas, Nicole also sang the blues in August. Her sister Kim had her first child and Nicole was thrilled to visit and act as nanny and chef for the new family. Realizing that she had absolutely no idea what to do with a new baby, Nicole attacked the miniature kitchen in search for her recipe of the month for August. It never occurred to Nicole to BUY fresh fish so she had to make do with what was on hand. And what was that? Canned tuna of course and this recipe is actually very easy and surprisingly good. After a 2-hour rampage, tearing the kitchen apart and admonishing the new parents for having absolutely NONE of the essentials, garlic, parsley, sun-dried tomatoes or capers, she set to work and here is the recipe of the month.

3 cans of water packed tuna

1 small tin of chipotle chilies (more or less to taste)

1 small onion finely diced

1 cup of mayonnaise

Drain the tuna and mix everything together. Spread on crackers or bread. Easy, huh?

This was not really a suitable meal for a nursing mother but the family enjoyed the snack knowing that the alternative was one of many recipes for soup made with hamburger. We caught Dad gazing wistfully at the multitude of magnets on the refrigerator offering fast food delivery.
